Introduction

Ingredients

1 cup pumpkin puree
3/4 cup oat flour (or about a cup of oats processed into a fine flour to make 3/4 cup)
1 1/3 cup egg whites
1 tbsp baking powder
2 tsp pumpkin pie spice
1 tsp vanilla flavoring
1/4 cup of packed brown sugar
Glaze
1/4 cup of maple or butter flavored syrup
2 tbsp peanut butter
dash of cinnamon
Tips
Don't be too rough and over mix. These muffins should be very light and fluffy. Also, we added a few scoops of protein powder to add some additional nutrients. These are great with chopped walnuts added!
Directions
Preheat oven to 375 degrees F.
Mix together all the dry ingredients and make a well in the center. Add the egg whites and vanilla to the center and fold ingredients together. Add mixture to muffin cups, you should have about 6 regular sized muffins.
Bake 10-15 mins
While these are baking, mix the Glaze together. When the muffins are cool, spread glaze on the top and serve.
Serving Size: Makes 6 regular sized muffins
