Introduction
I like to experiment with making bars for quick and energizing snacks. It is so much cheaper to make these at home than to buy them at the store! Ingredients

Dry
1.25 cup oats, ground into flour
0.25 cup oats, whole
0.25 cup raw almonds, chopped
0.25 cup raw cashews, chopped
0.25 cup sunflower seeds
0.25 cup protein powder (I used pumpkin seed)
Wet
1.5 cup dates (soak them if they are tough)
0.25 cup peanut butter
6 tbsp coconut butter
3-5 tbsp water
2 tsp vanilla extract
Topping
0.25 cup shredded coconut, toasted or raw
Tips
For other flavors, trade out half of a cup of other dried fruit for the dates and omit the shredded coconut and coconut butter. You can also play around with what kinds of nuts and seeds that you use.
Directions
1) Mix the dry ingredients in a medium sized bowl.
2) Place all wet ingredients in the blender and blend for 4 minutes, stopping to scrape the sides. A thick paste will form.
3) Spoon the paste into the dry ingredients and combine, stirring forcefully until all of the dry ingredients are incorporated. This may take a few minutes.
4) Spoon the dough into an 8x8 pan, smoothing it out evenly. Sprinkle on the shredded coconut and press into the dough.
5) Place in the freezer for 1 hour before cutting into bars.
Serving Size: Makes 17-20 squares
