Introduction

Thinking quickly while grocery shopping I knew I wanted to do this stew in the crock pot and the clock was ticking! With the thought of adding spice I went with chipotles in adobo sauce to be the star flavor accompanied by the typical stew vegetables. Browning the meat before cooking helps sear in the juices, but the corn, sour cream and cilantro help balance it to a surprising level. Ingredients

    1 pounds beef stew meat, large chunks
    1/3 cup all purpose flour
    1/2 teaspoon salt
    1/2 teaspoon pepper
    2 tablespoons vegetable oil
    1 1/2 cups beef broth
    4 cloves garlic, minced
    1 tablespoon chipotle peppers in adobo sauce, finely chopped
    1 teaspoon paprika
    2 tablespoons Worcestershire sauce
    1 sweet onion, large chopped
    3 Yukon potatoes cut into large chunks
    1/2 pound baby carrots cut in half
    1 small can sweet corn
    3 celery stalks, cut in large chunks
    1/4 cup sour cream
    2 tablespoons cilantro, chopped

Tips

Great weeknight meal prepared in advance.


Directions

Place meat in a large zip lock bag. Add flour, salt and pepper. Mix and shake until well coated.

Heat a large pan to medium high heat. Add oil and lightly brown floured meat. Depending on the size of pan, you may need to do this in two batches.

Place meat in the slow cooker. Stir in broth, garlic, peppers, paprika, Worcestershire sauce, onion, potatoes, carrots and celery.

Cover and cook on low for 10 to 12 hours or high for 4 to 6 hours. Before serving add sour cream and cilantro.
