Ingredients

    1 sweet potato (peeled and cubed in 2" pieces)
    2 zuccini (washed and cut )
    Yellow squash( washed and cut)
    2Green bell peppers(washed and cut)
    20 baby carrots, washed
    2 garlic cloves,chopped
    1 medium onion, thick slices
    Olive oil(About 2 tbsp.)
    salt and pepper to taste
    Italian blend dry herbs or whatever herb you have on hand

Directions

This recipe is so simple .
All you need to do is peel the sweet potato. Chop it into cubes about 2" in size. Same thing with green peppers,squash. You can also add other vegetables. Sometimes I add broccoli, Red peppers,cherry tomatoes.
Put everything else in a roasting pan. Mix with hands. Put it in the oven at 375 degrees for 20 minutes, during which time you can make couscous(I use near east brand box and follow the recipe on the box. In the microwave it can be prepared in 5 min.) or rice to go with it.
