Introduction

Ingredients

    2 cups rolled oats
    1 cup rolled oats, blended into flour
    1 15 oz can pumpkin puree
    2 large ripe bananas
    1 tsp salt
    2 tsp nutmeg
    2 tbsp cinnamon
    2 tbsp ginger

Tips

Adding 1/4 cup chopped walnuts and 1/4 cup raisins really makes these a delicious and more decadent treat.


Directions

1) Preheat oven to 350 degrees. Mix oats, flour, salt and spices in a medium mixing bowl.

2) Blend the pumpkin and bananas and pour into dry mixture. Stir well to fully combine. This may take about 5 minutes.

3) With a quarter cup measuring cup, scoop out dough and drop it onto your pan. Bake for 15-20 minutes.

Serving Size: Makes about 13 1/4 cup cookies
