Introduction

Ingredients

    1 tbsp extra virgin olive oil
    1 medium onion, diced
    2 stalks celery, diced
    10 medium baby carrots, diced
    8 oz sliced mushrooms
    salt, paprika, cayenne pepper, poultry seasoning to taste

    1 lb lean ground turkey

    2 cloves garlic, peeled & diced
    2 medium zucchini, diced
    1 15.5 oz can white cannellini beans, drained & rinsed well
    2 15.5 oz can diced tomatoes, undrained

Tips

Substitute the veggies (use what you have on hand) and season with your favorite spices.
If gluten isn't a problem, serve over rice, quinoa, or pasta.


Directions

Heat olive oil in a large skillet.
Add onion, celery, carrots, & mushrooms.
Season to taste with salt, paprika, cayenne pepper, & poultry seasoning. Saute until tender.
Add ground turkey & saute until browned.
Add garlic & saute for 1 minute.
Add zucchini, beans and diced tomatoes with liquid.
Simmer covered until vegetables are tender (about 45 minutes). Remove cover the last 10 minutes to reduce liquid if necessary.

Serving Size: Makes 6 1-cup servings.
