Ingredients

    2 fuji apples
    3 celery stalks
    1/2 cup golden raisins, soaked and drained
    1/4 cup dried cranberries
    2 cups pineapple
    1/2 cup green grapes, halved
    1/2 cup walnuts
    2 tbsp walnuts
    1/4 cup chives
    1 carrot, grated
    1 tbsp honey mustard
    2 tbsp apple cider vinegar
    2 tbsp olive oil
    2 medjool dates
    1 tsp salt
    1-2 tbsp water

Tips

This salad holds well in the fridge up to 2 days.


Directions

In a large salad bowl combine apples, celery, raisins, cranberries, pineapple, grapes, 1/2 cup of walnuts, chives and carrot.
In a high speed blender or a small chopper combine dressing ingredients - 2 tbsp walnuts, sweet mustard, apple cider vinegar, olive oil, dates, salt and water. Blend until smooth.
Pour dressing over the salad and mix well.
Serve immediately.
