Ingredients

1 Tbsp Olive Oil
1lb boneless skinless chicken breast- excess fat removed and cubed in to 1" pieces
1 green onion chopped
1oz cooking sherry (or other cooking wine)
1/2 cup coconut milk
1/4 cup greek yogurt- fat free plain
2 Tbsp sugar
1 tsp each of coconut and vanilla extracts
Tips
Tastes great served over rice seasoned with cilantro and lime
Directions
1 Heat the olive oil in a frying pan or wok over medium-high heat. Sautee the chicken for 3-5 minutes til nearly cooked through
2 Add green onion and carefully add the wine. Cook 1-2 minutes more until chicken begins to caramelize.
3 Remove the chicken from the pan and set aside. Add the greek yogurt, coconut milk, and sugar to the pan. Simmer on medium, stirring occasionally, until it begins to thicken and is reduced by half (about 5-8 minutes).
4 Add chicken back into pan along with the coconut and vanilla extracts. Simmer 1-2 more minutes and serve.
