Introduction

Need a change up from eating your daily breakfast CYTF crust out the crust on Quiche and I just played around with substitutions - super easy and can be prepped the night before and all you have to do is stick it in the oven while you get ready for work! Ingredients

    Cooking Spray or Olive Oil
    1 tbls butter
    1.5 cups of chopped bell peppers appx 1"
    2 large eggs
    1 egg white
    3/4 cup whole milk (any will do)
    1/4 teaspoon salt
    1/8 teaspoon pepper
    2 ounces shredded cheese (I USED PEPPER JACK - BUT USE WHAT YOU HAVE)

    1. Preheat oven to 425. Spray four 5 oz ramekins w cooking spray.
    2. Melt butter in a cook pan and add bell peppers until soft and sauteed
    3. Whisk together the eggs, egg white, milk, salt, pepper until well blended. Divide Shredded cheese and sauteed peppers into ramekins.
    4. Place ramekins on rimmed baking sheet.
    5. Bake just until set (the center should still jiggle a little), about 15-20 mins.

    If making at the same time follow the order - if not - do steps 2 & 3 and throw it in the fridge and then on the days you cook them do 1, 4 & 5!

Tips

You can do Swiss and Zucchini, Asparagus & Goat Cheese - possibilities are open!
