Ingredients

Steel Cut Oats 2 cups dry
Almond Breeze Unsweetened Vanilla 1 cup
Egg Beaters 1/4 cup
Unsweetened applesauce 1/2 cup
cranberries , whole, unsweetened 1/2 cup
cinnamon 1 tblsp.
splenda equivalent to 1 cup sugar
Tips
Be sure to have at least 2 cranberries in each mini muffin. Cook mini muffins about 25 minutes.
The batter does not rise when baking so mini muffins tins can be filled high.
Directions
1. Soak steel cut oats in almond milk for an hour.
2. Add egg and applesauce to pre-soaked oats.
2. Mix dry ingredients.
3. Mix together wet ingredients and dry ingredients.
4. Bake 350 degrees 35 minutes for 12 muffins.
5. Or bake 350 degreees 25 minutes for 24 mini muffins.
