Ingredients

Barley, pearled, cooked, 2 cup
*Extra Virgin Olive Oil, 2 tbsp
Onions, raw, 2 cup, chopped
Carrots, raw, 6 medium chopped
*Garlic (4 cloves)
*Beef broth, Great Value - 8 cups
Del Monte Diced Tomatoes, No Salt Added, 2 cup
Tomato Paste, 2 Tablespoons
Lea & Perrins, Worcestershire Sauce, 1 Tblsp
balsamic vinegar,1 tsp
*Herb - Thyme, Dried Ground (1 tsp), 1 gram
Kale, 6 cup, chopped
Directions
Cook Barley per package directions
While Barley is cooking heat olive oil in a large stockpot over medium-low heat. Add onion & carrots, sauté for 5 minutes. Add Garlic, sautéing 1 minute. Add broth, diced tomatoes, tomato paste, Worcestershire sauce, vinegar, thyme, bring to a low boil. Lower heat and simmer for 25 minutes. Add barley & Kale. Stir well and remove from heat and searve

could eliminate olive oil by cooking carrots, garlic, and onions in some of the broth. I would add some green beans and broccoli too and maybe some mushrooms. I like lots of veggies in my soup... maybe some baby corn. - 7/6/17

I imagine you could tweak it to your liking however it will change the calories and other vitals when you are watching your nutrition intake so if you do you will want to recalculate the nutritional information for yours.

I last made this recipe in 2014, when I got it out of the WW mag. My copy had been thrown away accidentally, and I was so sad that the recipe was "lost forever". The soup itself is quite tasty and easy to assemble (And pretty simple to tweak!) This is a lifesaver, thank you for posting this! - 1/11/18
