Number of Servings: 8

Ingredients

    1 tbsp shortening
    2 cups self-rising corn meal
    1/2 cup self-rising flour
    1 cup buttermilk (or enough to make pancake-batter-consistency)

Directions

1. Preheat oven to 425.
2. Grease a cast iron skillet with shortening.
3. Mix corn meal and flour well. Add enough buttermilk to get to right consistency. Pour into skillet.
4. Bake 25 minutes. Flip out of skillet immediately.
