Ingredients

1 can (16 oz) Rosarita Vegetarian Refried Beans
8 oz shedded Pepper Jack cheese
3 large eggs
1 can (7 oz) diced green chiles
3 Tbls all purpose flour
Directions
1. PREHEAT oven to 375.
SPRAY 8x8 inch glass dish with cooking
spray
2. BEAT egg white in small bowl until stiff peaks
form.
WHISK egg yolks in separate bowl, fold into
egg whites.
ADD flour into eggs until just combined.
FOLD in green peppers.
3. SPREAD beans over bottom of dish.
TOPwith half of egg mixture, spreading evenly.
SPRINKLE with half of the cheese, then
remaining egg mixture and remaining cheese.
4. BAKE uncovered 30 minutes or until golden
brown.
