Introduction
When I need something to eat but my gums are too sore to chew, or my stomach doesn't want me to eat anything, I make this mock potato soup. The sodium is high, but if this is all I am having in a day, I don't complain. If not, then I use low sodium chicken broth or homemade chicken broth. Ingredients

1/4 Cup Unsalted butter
1 TBSP Namaste GF Italian Herb coating Mix
1/4 Cup Brown rice Flour
1.5 Cups Chicken Broth (Low sodium works too)
1/2 Cup Half and Half (or sour cream)
Tips
A little bit of shredded cheese is delightful in this!
Directions
Melt butter over medium heat in a medium sized pot.
Add in Namaste GF coating mix and brown rice flour. Stir with a whisk. Let sit for about 1 minute to two minutes (This is really just for coloring, you can skip this if you want)
Add in chicken broth and whisk vigorously! Turn up heat a notch or two to make this part go a little faster. Let sit for about a minute or two until the soup starts to bubble and thicken. Whisk often!
Add in half and half or sour cream. Whisk again to mix well. Whisk the soup often until it's as thick as you like.
Pour into a large bowl and enjoy.
