Introduction

We love this casserole orginally found here on the site, and after entering my stats I found this to be a much healthier, less fat version! Use reduced fat cheese, it's even better!! Ingredients

    1 lb lean ground turkey
    4 Mission Heart Healthy 96% fat free flour tortillas, burrito size
    1.5 cups shredded sharp cheddar cheese
    1/4 cup salsa
    1 can fat free refried beans
    optional: taco seasoning

Directions

Brown the ground turkey, stir in refried beans and salsa.

Spray a baking dish with cooking spray, then alternately place a tortilla, then a quarter of the meat mixture and a small handful of cheese. Continue until you used all 4 tortillas.

Bake at 350 degrees for 15 minutes.

NOTE: I thought the original version was a little bland so I add taco seasoning to the meat after browning (I make my own) to jazz it up a bit. You can decide what suits your family's tastes.
