Introduction

This is basically how my mom makes stuffing, except she uses butter, and the stock from whatever bird she's making. I used homemade vegetable stock and extra-virgin olive oil. Ingredients

    4 medium onions, diced
    12 stalks celery, diced
    2.5 tablespoons olive oil (more or less to taste)
    1/2 teaspoon salt, optional (nutrition info includes it)
    12 servings (300g) stuffing mix (I used Marcy's Gourmet this time, but any is fine)
    2.5 cups or so stock

Tips

If you do this ahead and refrigerate until baking, add 15-30 minutes to baking time. Also, if you want to bake it alongside something that uses a different oven temperature, go for it. Just adjust the heating time up or down.


Directions

Preheat oven to 350. Cook onions and celery in olive oil and salt until they're very soft, but not browned. Toss with stuffing mix. Add stock. Put into an ovenproof dish and bake 30 minutes or so until browned on top and heated through.
