Ingredients

    8 oz Zeigler Black Pepper ham, chopped
    2 Cups baked potatoes, chopped
    1 Cup carrots, chopped
    1/2 Cup onion, sliced thin
    4 Cups water
    Bring these ingredients to a boil & reduce the heat. Keep the pot rolling, but not boiling.

    Add the spices: 2 tsp garlic ( more to taste)
    3 tsp parsley
    1 whole bay leaf. (The one who gets it in their cup or bowl has good luck for the next day.)
    1 tsp cayenne pepper (more to taste)

    When the soup is ready, use a pastry blender to chop the potatoes into the water to thicken the stock. Don't add salt! Add 1 oz shredded cheddar cheese per cup or bowl. Dish the hot soup into serving containers & stir. Enjoy!

Tips

Adjust cayenne pepper to taste. I like mine spicy!


Directions

Precook potatoes in microwave or use leftover baked potatoes.

Cook in pot on top of stove until potatoes soften into liquid. Reduce liquid, making sure potatoes don't stick to bottom of pan.
