Ingredients

    1 cup AP flour
    1 TBS Baking Powder
    1/8 tsp salt
    1/3 cup light brown sugar, packed
    1 egg
    3/4 Cup Silk Vanilla Soymilk
    3 TBS Canola oil
    2 tsp cinnamon
    1 Cup blueberries (fresh or frozen)

Directions

Oven at 375 F.
Line muffin tin.
In medium bowl beat together first 8 ingredients until smooth. fold in blueberries. Divide amongst 8 muffin cups.
Bake 25 minutes or until cake test comes out clean.

Serving Size: makes 8 standard (2.5 ounce) muffins
