Introduction

This is fabulous served warm or cold. Very filling. This is fabulous served warm or cold. Very filling.
Number of Servings: 8

Ingredients

    3.5 cups dried brown lentils, picked & rinsed
    1 bay leaf

    2 minced garlic cloves
    3 tsp Dijon mustard
    1/3 cup olive oil
    1/4 cup balsamic vinegar

    1 chopped red onion
    2 chopped Roma tomatoes
    1/2 cup chopped fresh parsley or 1 Tbsp dried


Tips

High fiber, low fat per serving and tastes delicious!


Directions

Bring a medium saucepan of water to a boil. Add lentils and bay leaf. Cover and cook on medium-low until lentils are tender, about 10 minutes. Drain and remove bay leaf.

Dressing: Whisk garlic, Dijon, olive oil and vinegar together in a small bowl.

Combine the lentils, tomato, onion and dressing.

Serve warm or cold.

Serving Size: Makes 8 servings of 1 cup each
