Ingredients

Half white onion (chopped)
10 oz fresh mushrooms (sliced)
4 cloves garlic (diced)
1/2 tsp red chili pepper flakes
1 tsp thyme
1 tsp olive oil
dash salt
1 tbs olive oil
4 tbs coconut oil
1/4 cup canned coconut milk
1 1/4 cups broth
1/2 cup almond milk
2 tbs soy sauce
1 tsp arrow root powder
1 tsp xanthan gum
diluted in water till smooth
Tips
I put this on my low carb cauliflower mash and serve it on the side of my homemade seitan. Yummm.... See Post Punk Kitchen for a great homemade seitan... It's sooo easy.
Directions
With 1 tsp olive oil in an iron skillet on medium high heat sauté the onions, mushrooms, garlic, red chili pepper flakes, and thyme with a dash of salt, till the onions are translucent.

in the same skillet add the 1 tbs olive oil, 4 tbs coconut oil, 1/4 cup coconut milk, 1/4 cup broth, and the arrow root - xanthan gum you have diluted in water.
whisk till smooth.
now add the rest of the vegetable broth, almond milk, soy sauce, and the sautéed mushrooms you put off to the side and let these cook on medium high heat. Constantly whisking, bring up to a soft boil.
Constantly whisk for about five minutes at a soft boil till your mixture thickens to your liking.
