Ingredients

    Ingredients:

    Black-eyed peas, dried 2 cups
    Olive oil, 2 tbsp
    Louis Rich Turkey Bacon, 10 slices cut into small pieces
    Onion, I large diced
    Red Bell Pepper 1 large cut into small pieces
    Garlic, 4 cloves pressed
    Salt, 1 tsp
    Brown rice, 1 cup uncooked
    Cayenne, 1/2 tsp
    Black Pepper, 1/2 tsp

Tips

Start the night before to soak the beans. (Or start with rinsed and drained canned cooked peas for same day)

Stir Cayenne and Pepper into beans in large pot. Stir in bacon/vegetables to bean mix. Add rice and stir again.


Directions

Rinse and remove bad peas, then add to large pot with 5 cups of water. Bring to a boil, then cover and take off the heat to soak overnight.

Rinse beans, add 5 cups of water and bring to a boil. Lower to simmer 45 minutes or until tender. Drain and return to large pot.

In saucepan, make brown rice according to directions, and using the remaining salt. (about 40-45 mins)

In frying pan, cook bacon until crisp in 1 tbsp oil. Add onion, pepper and garlic. Saute until onion is tender (about 12 minutes).
