Ingredients

    1Avocado, sliced
    1 Rio Star grapefruit, sectioned, juices reserved
    2 tsp. Annie's Naturals Organic Dijon Mustard
    1-5oz. package Organic Girl Super Greens Salad Mix 1/2 cup Organic Valley Orange Juice
    2 California Medjool Dates
    1/2 Red onion, thinly sliced
    3/4 tsp.Celtic Sea Salt
    1/4 tsp. freshly ground black pepper

Tips

This salad is the perfect start to Sunday Brunch or as a side salad for baked salmon.


Directions

Place salad greens in a medium bowl. Add grapefruit sections,1/2 of the avocado, diced, and the sliced red onion. In the bowl of a food processor or blender container, add the other 1/2 of the avocado, dijon mustard, orange juice, 2 tablespoons of the reserved grapefruit juice, and 2 pitted dates, salt and pepper. Process until completely smooth, adding a little water if desired to thin. Toss immediately with salad ingredients and serve.

Serving Size: Makes 4 1-cup servings
