Introduction

This soup is mild in flavor (except when you chomp on a piece of ginger!) Add other spices if you like, but I created this to be mild. You can experiment with adding a nut butter to the hot broth. It makes it more flavorful but adds to the calories. Add a little bit at a time. I used a natural, nothing-but-peanut butter. (Hmmm....maybe some of the low-fat peanut butter powder would work well. Ingredients

    4 cups vegetable broth (homemade or storebought)
    4 cups water (or extra broth)
    3 cloves Garlic, minced
    1 cup onions, chopped
    1/4 cup Ginger Root, peeled & sliced (1/2" diameter or more or less, according to how much you like ginger)
    8 Shiitake mushrooms
    1 TBSP Westbrae Natural White Miso
    1TBSP tamari or soy sauce
    2.6 ounces Somen Rice Noodles (one bundle out of a 3 bundle pack that total 8 oz)


Tips

Add some natural peanut butter change the flavor. After cooking, I divided the soup in half and added 2 teaspoons
Substitute rice noodles for the somen noodles. The rice noodles are sturdier and gluten free.


Directions

Saute minced cloves and onions in a big soup pot with 1/2 cup broth until they are softened. Add more broth as needed. Add ginger slices and mushroom. Cook about 2 minutes. Add remaining broth and all of the water. Stir in tamari & miso. Cook for 25 minutes.

Break the bundle of noodles to the size you want. Stir into soup. Cook for another 5 minutes. Done
