Introduction

Ingredients

1-30 oz. pkg. fat free hash browns
2 cups cheddar cheese, shredded
1.5 cups chopped fresh brocolli
1 cup fresh spinach, chopped
12 slices bacon, chopped and cooked crispy
8 eggs
.5 cup fat free milk
1.5 Tbsp. garlic powder
1.5 Tbsp. onion powder
.5 Tbsp. pepper
Directions
1. Preheat oven to 400 degrees.
2. Spray a large baking dish (9X15) with Pam. Spread hash browns in bottom and up sides of dish.
3. Bake for 30-40 minutes or until cooked and lightly browned. Remove from oven and let cool about 10 minutes. Reduce heat to 350 degrees.
4. In the meantime, cook the bacon until crisp. Drain on paper towels and chop vegetables.
5. Place cheese in a even layer on top of the hash browns. Layer broccoli and spinach next. Sprinkle bacon over veggies.
6. Beat eggs with garlic powder, onion powder, pepper and milk. Pour evenly over the veggies in the dish.
7. Bake for 30 minutes or until a knife inserted in the middle comes out clean.
8. Remove from oven and let set 5 minutes before serving.
