Ingredients

    1 1/2 c old fashioned oats (oat flour)
    1 c flour
    1 tsp salt
    1/2 tbs baking soda
    1/2 of a large egg
    1/4 c sugar
    6 tbs molasses
    1 1/2 c unsweetened almond milk.

Tips

original recipe calls for buttermilk and whole wheat flour...also very delicious.


Directions

Blend oats in a blender of food processor to make oat flour. Mix first 4 ingredients in a large bowl. Mix wet ingredients including sugar in a separate bowl and wisk.

Mix wet ingredients into dry. Spray a regular sized muffin pan. Put 1/4 c in each well. Bake at 375 for 25-35 min or until toothpick inserted into the center comes out clean.

Makes 15 muffins. Also makes one regular loaf if desired.
