Introduction

This version was made with only 8 eggs: it is better if you use a full 10-12.
The heat in the green chiles is minimal when they are canned without seeds, but you can kick it up or down depending on your salsa selection. I like a plain medium-heat chunky salsa.
This has been one of my favorite foods since early childhood, when my father used to make it for Rose Bowl parade parties in Pasadena, and it was always my Birthday-Dinner request.-- I hope that you enjoy it!

Ingredients

    4-4 oz cans of Best Choice Whole Green Chiles
    1/2 C shredded Sharp Cheddar
    1/2 C shredded Mozzarella
    7 large Eggs

    1 C Salsa

Tips

It is decadent to roll a slice of this casserole into a fajita-size tortilla with a dab of plain Greek yogurt (pretty good for faux sour cream, y'know). But it is also amazing to just eat this with a fork.


Directions

Line the bottom of a large 9X13 baking dish with the whole green chiles (do NOT oil the pan). Spread some of the chiles open to completely cover the bottom, overlapping is okay.
Sprinkle the cheeses evenly over the chilies.
Beat the eggs, and pour them gently over the chilies and cheese.
Cook the casserole for about 30 minutes, or until the eggs are fully set up (it can take longer if you use more eggs). It is best if you allow the top to become lightly browned.
Spread the salsa over the top, and bake for another 10 minutes.
