Introduction

These waffles are light and fluffy and delicious! While trying to cut down on foods made with wheat, I discovered oat flour. I grind my own from rolled oats in my spice grinder. Ingredients

    2/3 cup Rolled Oats(measure then grind into flour)
    1/4 cup baking mix
    2 tbsp. whole flax seed (measure then grind)
    1 tsp. baking powder
    1/8 tsp. sea salt
    1 tsp. cinnamon
    1/8 tsp. mace
    1/8 tsp. nutmeg
    1/8 tsp. ground cloves
    2 egg
    1 cup milk
    4 tsp. brown sugar
    2 tsp. grape seed oil

Tips

I ground the oat flour from rolled oats. The flax seed is ground fresh also. The baking mix brand that I use is Pioneer, but Bisquik is fine. I use the Himalayan pink sea salt.


Directions

Combine all dry ingredients in bowl. Set aside. Mix all wet ingredients into separate bowl and add to dry mix. Stir 2 to 3 minutes to mix well. Measure 1/4 cup batter onto oiled waffle iron. Bake waffle for 5 minutes. For crispier waffle, bake 6 minutes.

Serving Size: Makes 5 waffles
