    1/2 cup apple sauce
    1 tsp baking powder
    2 eggs
    1 tsp vanilla extract
    1/2 tsp salt
    3/4 cup white sugar
    2 cup grated carrot
    2 tsp cinnamon
    1 1/2 cups whole wheat flour


Grate carrot. Beat eggs. Mix all ingredients. Then add eggs, carrot, and apple sauce. Mix well. Spray 9x13 pan and bake at 350* for 45 min, or until toothpick comes out clean.

    I added this to my cookbook to try someday soon. Looks good! I think I'll replace some of the white sugar w/ brown sugar and/or honey, since I'm trying to cut down on white sugar. - 3/26/08

  • I used splenda white sugar, a bit of spenda brown sugar and a bit of vanilla protein powder. I made them into cup cakes. They are great. Heaven with icing (a mix of power sugar and whipped cream cheese). - 9/17/14
