Ingredients

    1 Cup Almond Meal
    1 Cup Cashew Meal
    1 Medium Banana, Mashed
    1/3 Cup Mini Semi-Sweet Chocolate Chips
    2 Tbsp Plain, Whole Milk Yogurt
    2 Tbsp Sun Warrior Natural Protein Powder
    1 Large Egg, Beat
    1/2 tsp Cinnamon
    1 Tsp Ginger Root Powder

Tips

To make it even healthier, use berries or dried fruit instead of chocolate chips. Raw, organic whole milk is best for everyone. This is also a great pregnancy snack, full of beneficial nutrients and protein.


Directions

On the night before, mix almond and cashew meal with 2 tbsp. yogurt, cover and let sit over night in room temperature to break down phytates and other anti-nutrients. The next day, preheat the oven to 350 degrees, add the rest of the ingredients and mix by hand of with a mixer. Butter a pan and add cookie dough with a spoon, making 12 evenly sized cookies. Cook for 22-25 minutes.
