Ingredients

4 large sweet potatoes
1/4 cup 1% milk
2 tsp vanilla extract
2 tsp cinnamon
4 tsp packed brown sugar
8 marshmallows
Tips
You could make ahead. Then take the sweet potatoes out about 2 hours before you plan to eat. Let them come to temp for about an hour. Then put them in the oven at 350 for about an hour and add the marshmallows about 10 minutes before you take them out!
Directions
Peel, cut large cubes and boil sweet potatoes for about 40 minutes. Pre-heat oven to 350. Drain sweet potatoes then add milk, vanilla, cinnamon and mix well with hand mixer. Spread mixture into a prepared casserole dish (use non stick cooking spray). Sprinkle brown sugar and sugar over the top. Press the 8 marshmallows on top and bake in the oven at 350 until marshmallows are golden brown.
