Number of Servings: 12

Ingredients

    2 cup All Purpose flour
    2 cups Whole wheat flour
    4 Tbsp Wheat Germ
    4 Tbsp Ground Flax seed
    1 1/2 tsp Baking Soda
    3/4 tsp Salt
    Lemon Zest of one Lemon ( grated) or peel
    1 tbsp Granulated Sugar
    1/4 cup chopped cranberries with a dusting of flour to stop them sticking together
    1 cup Skim milk ( Dairyland)
    1 cup 2 % milk ( Dairyland)
    20 ml Lemon Juice


Directions


Combine Milk and Lemon juice and set aside to "sour " the milk
Combine all the dry ingredients and stir with whisk
make well in the middle and pour in wet ingredients and mix until moist , then stir in chopped cranberries and Lemon zest /peel
turn out onto lightly floured surface and knead lightly 3 or 4 times and shape into 8 or 9 inch round.
Spray pan , Put loaf in and draw an "+" on the loaf to mark the quaters ( this is not only a traditional thing, but it helpds to divide portions) , I continue put divisions in the bread to mark out my 12 portions which makes it easier once it is baked.
Bake at 450 F degrees for 15 min , reduce heat to 400 and bake a further 15 min till loaf sounds hollow when tapped.
Turn out an cool on wire rack. Cool .
serving size: one "slice" if divided into 12 wedges
