Ingredients

    1 cup cooked spaghetti squash strands
    1 tsp vanilla extract
    1 tsp ground nutmeg
    1/3 cup Splenda
    1 laughing cow regular cream cheese wedge
    1 tsp cinnamon
    2 TBL eggbeaters
    1/2 cup part-skim ricotta

Tips

"Don't fear the spaghetti squash". (It's a yellow, 'fat' oblong squash in the produce section).


Directions

Preheat oven to 360. PAM-butter spray the inside of a small baking dish (I used a glass one about 6" long by 4" wide). Cook your spaghetti squash (poke holes in it every 4-5 inches all around; place in microwave for 10 minutes, allow to cool, remove seeds and make 'strands' out of the center using a fork) and measure 1 cup of strands into a bowl. Add the rest of the ingredients and mix well.
Pour into baking dish and bake 35 minutes or until set. Cool and cut in half.
For 1 serving (1/2 the pan - this equals 1/4 LEAN (1/4 cup PS ricotta) plus 1 GREEN (1/2 cup spaghetti squash). If you eat the whole pan it's 1/2 lean plus 2 greens.

Serving Size: Makes 2 servings, each seving is half of a 6x4" baking pan
