Ingredients

2 15 ounce cans of pumpkin (or about 4 cups of fresh pumpkin)
1 13.5 ounce can light coconut milk
4 cups chicken (or veggie) broth
2 cloves garlic
2 tsp ginger
1 tsp chili powder
salt/pepper to taste
Tips
adjust spices for your preferences- I prefer extra spicy but the measurements here is a medium amount of spice
Directions
mince garlic, add all ingredients to pot, simmer for about 20 minutes, use immersion blender or blend in regular blender in batches (this is only if necessary- it's usually "soupy" enough without the need to blend)
