Introduction

Ingredients

    2 lbs Full Fat Ground Beef (or half Beef and have Turkey)
    2 Large Organic Eggs
    1/2 cup Red Onion (chopped fine)
    1/2 cup No Sugar Ketchup
    1/2 cup No Sugar Applesauce
    1 tsp Garlic powder (or garlic crystals)
    1 tsp Italian seasoning
    1 tsp White pepper (or black)
    1/2 cup Chia Seeds
    1/2 cup Water
    1/2 cup Portobello mushrooms (chopped small)

Tips

The addition of Chia Seeds (instead of oatmeal or bread crumbs) means you are also getting a healthy dose of Omega-3 fatty acids in this meatloaf.

If the meatloaf comes out too dry for your taste, double the amount of water (which the Chia Seeds need to form a gel) or double the amount of Ketchup, or add some (2 tbsp) tomato paste.


Directions

Combine all the ingredients together in a large bowl. Mix with your hands until well mixed. Place in 13x9 inch lined (or sprayed with olive oil) baking dish and make into a loaf shape. You can put some additional no sugar Ketchup on top with a basting brush.

Bake at 350 degrees for one hour. Cool for 5 minutes before serving. Makes 10, 3 oz. servings.

    I followed the recipe exactly, it was 100 deg after 1 hr so I let it cook for 1hr 45 min (I have never seen a meatloaf cook in 1 hour). it was soupy after 1 hour but It eventually solidified/caked at 1 hr 30 min...it was delicious but fell apart easily. I will make it again. - 4/3/16
