Introduction

This recipe is intended to be used with pork chops (or chicken), but you can make it by itself for a tasty, meatless entrée or side dish. Ingredients

    -15 oz. can Black Beans (or your favorite beans)
    -16 oz. can Tomatoes with green chilies, 2 cup
    -1 8.5 oz. pkg. Uncle Ben's (or any brand) ready-rice, whole grain medley
    -1 pkg. Fajita Seasoning Mix

Tips

You can use any kind of beans for this recipe.

You can use regular rice (or quinoa) for this recipe if you don't have Ready Rice, but you will need to cook it first, as 12 minutes.


Directions

-Season pork chops with about 1/3 of the seasoning packet and brown (about 2 min per side) in large skillet.
- Add beans and tomatoes and cover, cooking for about 10 min. or until the meat cooks through.
- Add ready rice and stir well. Let rice heat through (about 2 min) and serve.

Serving Size: Makes 6 one cup servings

    Very Good
    I used two cans of Rotel, which made it too spicy for me, but my husband loved it. Instead of ready rice, I cooked rice separately and mixed to heat through. I also used salt, pepper, and onion powder to season chops. I might try Italian inspired ingredients (white beans, tomatoes) next time. - 4/1/14
