Ingredients

- 4 overly ripe bananas, mashed
- 1/2 to 1 cup of peanut butter (I used approx. 2/3 C. organic coconut/peanut spread Earth Balance)
- 1/2 cup of shredded carrot
- 2.5 C. old fashioned oatmeal
- 2/3 C. dried fruit (I used blueberries)
- 2/3 C. shredded coconut
- 4 scoops of zero carb protein powder (I used Nature's Best in vanilla)
Tips
If you're expecting an actual "cookie", you're going to be disappointed. I made this in an attempt to eat something first thing in the morning, as most things will make my stomach turn. Its not very sweet and has more of a doughy texture. Which works well for me!
Directions
Preheat to 350.
Mash bananas, add in all other ingredients. If it looks to wet, add in more oats or protein powder. Use tablespoon to scoop onto parchment paper lined baking sheet. Flatten slightly to cook a bit faster.
Bake for 13 minutes, cool on rack.
Serving Size: makes 24 - 26 small "cookies"
