Ingredients

    1/2 cup uncooked brown rice
    1-1/4 cups beef broth
    4 oz sliced fresh mushrooms
    1 small shallot, minced
    1/2 teaspoon chopped fresh thyme
    3 tablespoons olive oil, divided
    1 tablespoon butter
    2 bone-in, skinless chicken breasts
    1/4 teaspoon salt
    1/4 teaspoon freshly ground pepper

Directions

Preheat oven to 350 degrees. Combine rice,
broth, mushrooms, shallot, thyme, 2
tablespoons oil and butter in a lightly greased 9-
inch square baking dish. Cover and bake 30
minutes. Meanwhile, heat remaining olive oil in
a skillet over medium-high heat; sprinkle
chicken with salt and pepper. Brown chicken in
hot oil 3 minutes per side; add chicken to rice
mixture in baking dish. Cover and bake 45
minutes longer or until chicken is done and rice
is tender
