Introduction

Because sometimes you just gotta have a muffin. Because sometimes you just gotta have a muffin.
Number of Servings: 12

Ingredients

    1.5 c wheat bran
    1 c light soy milk
    12 cut up dates

    1/2 c unsweetened apple sauce
    1 egg/replacer equivalent
    2/3 c brown sugar
    1/2 tsp vanilla extract

    1/2 c flour (all purpose white)
    1/2 c flour, whole wheat
    1 tsp baking powder
    1 tsp baking soda
    1/2 tsp salt

    I added a little cardamom and nutmeg as well.

Tips

Adapted from allrecipes blueberry bran low fat recipe; may replace dates with blueberries and use 1 real egg and 1 c nonfat milk to return to original.


Directions

Soak bran with milk and dates for 10 minutes.
In another bowl, sift together dry ingredients.
In large bowl, stir together applesauce, egg (replacer), brown sugar, vanilla.
Beat in bran mixture to above.
Stir in dry until just blended. (Fold in berries or other fruit now, if using)
Spoon into 12 large muffin cups.

Bake 15-20 minutes at 375, until tops spring back and toothpick come clean.

Serving Size: Makes 12 muffins
