Introduction

Ingredients

    1 16oz container of 1% Cottage Cheese
    3/4 of a 32oz. container of Vanilla Non-Fat Greek Yogurt
    1 can of No Sugar Added mandarin oranges (drained)
    1 can of pineapple chunks in juice (drained)
    1/2 cup of chopped pecans
    2 boxes of sugar-free orange gelatin

Tips

Can place in freezer for faster prep.


Directions

Add 1/2 scoop of vanilla protein powder to cottage cheese in a large bowl with a spatula. When powder is dissolved, add 1 box of orange gelatin. Add mandarin oranges and pineapple, then add the 2nd box of orange gelatin. Stir gently until the color is uniformly orange. Add in yogurt with a spatula a cup at a time. Fold yogurt into mixture gently, until the mixture is a light peach color. Gently stir in the pecans. Pour mixture into a glass dish (or multiple small dishes) and refrigerate until set.
