Ingredients

    1 (8-inch) Whole Wheat Fajita Style tortilla
    1 (6-6 ˝ oz.) can solid white tuna in water, drained
    1 tablespoon mayo with olive oil
    1 teaspoon finely chopped celery
    1 teaspoon chopped onion
    1 teaspoon chopped tomato
    1 to 2 teaspoons jalapeno pepper, chopped or to taste
    Sea salt and pepper
    1 ounce shredded cheese
    Salsa, red or green

Directions

1. Set oven rack 4 inches from broiler and preheat. Line a rimmed baking sheet with foil.
2. Place the tortilla on the foil.
3. Combine tuna, mayo, celery, onion, chopped tomato and chopped jalapeno peppers.
4. Salt and pepper to taste.
5. Spread tuna mixture evenly over the tortilla and sprinkle with cheese.
6. Place in the oven and broil until cheese is bubbling, 1 to 2 minutes.
7. Serve immediately with salsa.

Serving Size: Makes one serving
