Ingredients

    1 large sweet potato, cubed
    1/2 medium yellow onion, chopped
    1/2 green bell pepper, chopped
    1 cup fresh spinach
    4 ounces chicken breast, cubed (pre-cooked)
    1/2 cup Rotel with green chiles
    1 tsp. coconut oil (or olive oil)
    1 clove of garlic
    2 large eggs
    Salt and Pepper to taste
    Optional spices:
    -Paprika
    -Cumin
    -Garlic
    -Minced onion

Tips

Season to taste. Get creative, this is an extremely adaptive recipe.


Directions

Wash, dice and boil sweet potato for about 8 minutes until cubes are fork tender. Drain and set aside. Add coconut oil to pan and saute onion and bell pepper in garlic. When onions are almost cooked through, add spinach and sweat it out. Next, add sweet potato, rotel and chicken and cook until all is browned nicely. Crack 2 eggs on top of mixture and cook until sunny side up (or your preference). Serve immediately
