Number of Servings: 2

Ingredients

    2 Tbsp Extra Virgin Olive Oil
    1/2 cu Fresh mushrooms chopped or sliced
    6 Cherry tomatoes cut in halves or quartered
    1 cup Frozen chopped spinach
    1/2 cup Fresh spinach
    1/4 cup Fresh onions chopped
    1 Boullion cube

Tips

Optional seasoning, garlic (fresh or powdered), black pepper, crushed red (cayenne) pepper


Directions

Chop vegetables

Add oil to skillet and let heat (but don't burn)

Add bouillion cube to oil, break apart

Add vegetables and saute

Serve hot over eggs (breakfast/brunch) or over rice or pasta

Serving Size: About 2 1/2 cup servings
