Beautiful, colourful and fresh tasting, this was my first foray into the mysterious world of quinoa. Beautiful, colourful and fresh tasting, this was my first foray into the mysterious world of quinoa.
Number of Servings: 5

Ingredients

    100 mls red quinoa, approx 1/2 cup before cooking
    2 c gently packed raw baby spinach
    1 c cherry tomatoes, halved
    2/3 c diced cucumber, not peeled
    1 green onion, thinly sliced
    2 Tbsp lime juice, approx 1 lime
    1/2 tsp cumin
    Salt and pepper to taste

Original recipe had avocado which I did not have on hand, also red onion but I chose green onion instead.


Directions

Prepare quinoa; rinse for 15 minutes with generous amount of water, strain, then bring to boil in water (twice the amount as quinoa) then simmer 15-20 minutes until water is absorbed. Cool in fridge OR rinse gently in cold water if you don't feel like waiting.
Prepare and toss remaining ingredients then add cooled quinoa.

Serving Size: Makes 5 1-cup servings
