Ingredients

    *Hunt's Tomato Sauce, no salt added, 8 oz.
    *Turkey, Ground turkey, 93% lean, 12 oz, cooked
    Bushs Black Beans, drained and rinsed, 15 oz.
    *Food for Life Sprouted Corn Tortilla, 10 tortillas
    *Kraft Shredded 2% Mexican Four Cheese blend, 1.5 cup
    *Enchilada Sauce Mix, Mccormick
    *Hunt's Tomato Sauce, no salt added, 8 oz.
    *Green chile, chopped, 4-7 oz can

Tips

Serve with shredded lettuce and chopped tomato or salsa, if desired.


Directions

Mix the Chimichurri sauce mix with water and tomato sauce as directed on package. Measure 1 ½ c. of chimichurri sauce and mix with cooked chicken or turkey, drained and rinsed beans, green chiles, and about half of the enchilada sauce. Mix the remainder of the chimichurri sauce and enchilada sauce together. Pour about ½ c. of chimichurri sauce into the casserole dish. Layer in a casserole dish tortillas, meat, a bit of sauce and a sprinkle of cheese. Repeat, ending with cheese. Cook in oven at 350 degrees until heated through or in the microwave for 15 minutes.
