Ingredients

Green soybeans, 1 can, drained & rinsed
Green beans, fresh, 1 cup, broken into pieces
Swiss chard stems, 1 cup, chopped fine
Carrots, raw, 2 cups chopped
Water, 1.5 cups
Rice vinegar, 2 T
Soy Sauce, 1/2 cup
Honey, 3 T
Mushrooms, 3 large fresh, chopped
Chinese rice noodles, 2 cups
Garlic, 2 medium cloves, diced
Olive Oil, 3 T
Corn starch, 3 T
Directions
Cook rice noodles in hot water for 5 minutes; drain and rinse with cold water, and set aside.
Stir-fry garlic in olive oil. Add Swiss chard stems, carrots, and green beans; stir-fry on low for 5 minutes.
Add sauce ingredients: rice vinegar, soy sauce, corn starch, water, and honey. Increase heat to medium, stirring frequently. When sauce thickens, add mushrooms and soybeans. Stir to coat and cook another 3 minutes or so.
Serve over noodles. Can also be served over brown rice.
Makes about six 1.5-cup servings. You can substitute any fresh veggies you have in the refrigerator.
