Introduction

Ingredients

    6 eggs
    1/2 lb. chorizo, cooked and drained of grease
    1 package of frozen spinach, heated and drained
    1 cup low fat ricotta cheese
    1/4 cup feta cheese, crumbled

Tips

This could be used with any type of meat - I just happened to have chorizo (my favorite) on hand! It would be lovely as a vegetarian dish, or you could always use bacon or sausage!


Directions

1) Preheat oven to 400 degrees.
2) Cook chorizo, drain the fat out
3) Whisk together eggs, then fold in the ricotta
4) Mix in chorizo, spinach, and feta cheese. Add in a little salt and pepper if you'd like.
5) Pour into a glass baking dish or nonstick pan. I used an oval shaped pan, but it would've been about a 9x13" pan. You could also use an 8x8, you might just need to cook it a little longer!
6) Bake for approximately 30 minutes. I didn't take mine out until the top was a little browned. A standard test of doneness would be to jiggle the pan a bit - if the center doesn't move, it should be done.
