Ingredients

1 bunch (8-10) asparagus spears
2 diced scallions or 1 small onion
2 sprigs of thyme
3-4 mini sweet peppers tri-colores
2 mini seedless cucumbers
3-4 oz. plain greek yogurt
vine ripened tomato (medium)
Tips
You can prepare more of the plain greek yogurt dressing for salad or dip. Especially helpful if salad is to be refrigerated.
Directions
Boil water for blanching of Asparagus (salt optional)
cut 3/4 of inch stalk from asparagus
Pour boiling water over asparagus to soften or lightly steam to maintain crunchiness (pat dry)
Mix diced vegetables together setting aside 1-2 oz of plain greek yogurt, thyme, 4 cucumber slices
Add set aside mixture to blender for dressing
Use reainder of yogurt to mix into combined salad for creaminess
Excess blended mix can be used as dip for fresh veggies
Serving Size: Makes 5 half cup servings
