Number of Servings: 12

Ingredients

    1 - 1 pound bag dried black beans
    1 - 4oz Hamhock
    4 cups water
    4 cups low sodium chicken stock
    1 cup chopped carrots
    1 cup chopped onions
    1 cup canned diced tomatoes

Tips

Don't add the chicken stock or salt before the beans are tender -- salt will toughen the skins on the beans


Directions

Soak beans over night in cool water. In the morning drain and rinse beans (sort through to clean any debris). Add beans, veggies, hamhock, and water to crockpot and simmer on low for 6-8 hours until beans are tender and all the meat has fallen off the hamhock. Add chicken stock to desired soup consistency. Add salt, pepper, and herbs of your choice to taste.
