Introduction

This is a combination of different recipes so there are multiple different dressings included but I like to use them all. This is a combination of different recipes so there are multiple different dressings included but I like to use them all.

Ingredients

    1 can black beans, drained and rinsed
    1 can cannellinni beans, drained and rinsed
    1 can red kidney beans, drained and rinsed
    1 can mexi corn, drained
    2 large colored peppers, chopped
    1 med sweet onion, chopped
    1 packet Good Seasons Ital. dressing, mix as directed but omit the water.
    6 Tbl. lime juice
    2 Tbl. sugar
    1 tsp lime zest
    1/2 C cilantro, chopped
    1/2 - 3/4 C Chipotle salsa (optional)
    salt & pepper to taste
    cumin and/or dried chipotle pepper optional.
    2 cloves crushed garlic goes good in here too but leaves you with garlic breathe so make this optional.

Tips

add salt and pepper [black, red, or dried chipotle] to taste.


Directions

Mix all together and refrigerate.

Serving Size: makes 10 1-cup servings
