Ingredients

    0.50 cup melted butter
    8 large eggs
    0.50 cup coconut flour
    0.25 tsp pink salt
    0.25 tsp baking soda
    0.25-0.50 cup coconut milk (light or regular)
    1-2 tsp raw honey or agave nectar

Tips

Mixture will be very thick. The original recipe called for 0.25 cup regular coconut milk, but I used light coconut milk and added an extra 0.25 cup. Serve with fruit and/or coconut/maple syrup.


Directions

Turn on waffle iron. Melt butter. In large bowl beat eggs for 30 secs with electric mixer until well blended. Slowly add melted butter while still mixing. Add coconut flour, salt, baking soda, honey and coconut milk. Mix for about 45 secs until mixture becomes thick. Cook according to waffle iron directions.

Serving Size: Makes 8 thick waffles
